Two chefs partner on new restaurant incubator in west Louisville

A 10,000-square-foot restaurant incubator is coming to West Louisville in early September, according to Louisville Business First.
Aaron Williams, owner of Chicago Jerk Tacos, and Chef Austin Harris, formerly of Tha' Drippin' Crab, have joined forces to create The Shop One Stop: Your Creative Kitchen Space at 227 S. 30th St., across the street from the Norton Healthcare Sports and Learning Complex.
Williams said the new restaurant incubator, which is modeled after Chef Space, aims to encourage people who are catering out of their homes to start their own restaurants.
"I feel like there is a gray area between cooking at home and your first brick-and-mortar restaurant," Williams explained. "You don't have the clients to go into a brick and mortar, but you can't get the clients working out of your home. So, it's important that you have a stepping stone."
The Shop will offer various packages for cooks ranging from $150 to $1,050.
Williams said the space is big enough for 20 businesses to operate at once. He added the project will increase the number of restaurants in West Louisville, which is considered a food desert.
